Bottom fermentation

Most pilsner beers ferment during 8 to 10 days at a lower temperature (between 10°C and 12°C). The yeast then falls to the bottom of the fermentation tank. This is also known as “under fermentation”. It is not the temperature that makes the yeast fall,  this is due to the used type of yeast culture. The yeast culture also plays an important role in determining the beer’s aroma.
